What is tofu?
Tofu is a healthy and popular product made from soy milk and curdling agent (coagulant). Tofu may also be fermented with the help adding micro-organisms. The smell and flavor of tofu itself is not distinctive. Tofu is a vegetarian and vegan food and is very popular among them as tofu nutrition is very high. It is a wonderful source of protein, calcium, manganese, phosphorus, copper, selenium, omega-3 fatty acids, zinc, iron, vitamin B1. It has the same health benefits as soy, because is made of soy milk. It can be used in sweet and savory dished and even marinated. Tofu came from China (approximately 164 BC) and is traditionally used in Southeast Asian and East Asian cuisines. It can be of different kinds: fresh tofu (made directly from soy milk) and processed tofu that is made from fresh tofu.

How to cook tofu?
There are many vegetarian recipes how to cook tofu and make any dish special, delicious and useful. Also a great number of vegan recipes can be found. But sometimes it’s not necessary to look fort hem! We recommend adding tofu to your favorite dishes: pizza, pasta salads, soups, rolls. Here we suggest you some easy one.
TOFU AND BROCСOLI WITH OLIVE OIL
Ingredients:
- 3 tbsp olive oil
- approx 2 cups chopped broccoli,
- 1 block of firm or extra firm pressed tofu
- 1/4 tsp cayenne pepper
- 3 tbsp corn starch
- 1/4 cup soy sauce
- 1 cup water
How to cook:
Cut tofu into 1 inch cubes. In a large skillet fry ginger and cayenne in olive oil for 1 minute. Then add tofu and broccoli and continue to cook until broccoli is done, about 6-8 minutes.
In a separate small bowl, mix together the corn starch, soy sauce and water, then add this mixture to the broccoli and tofu. Cook until sauce thickens, then remove from heat.
Serve with rice or whole grains and enjoy!
